Step 1 – Smash Cucumbers
Lightly smash cucumbers with the flat side of a knife, then cut into bite-sized chunks. Place in a colander, sprinkle with salt, and let drain for 15 minutes.
Step 2 – Make Dressing
Whisk together minced garlic, chili oil, vinegar, and sugar.
Step 3 – Toss
Pat cucumbers dry, place in a bowl, and toss with dressing. Chill before serving.
